Founded by award-winning Chef and Chocolatier Annaluna Karkar, Après l'Etoile is a Monterey, CA - based, small-batch chocolate collective celebrated for bold flavor combinations, elegant presentation, and uncompromising quality. Known for pushing the boundaries of traditional chocolate craft, Karkar's creations have garnered international acclaim and a devoted following.
In her formative years, Annaluna trained extensively with world-renowned chef Stéphane Tréand MOF, where she developed a deep appreciation for combining technical precision with creative flavor.
Her work has been honored with multiple awards from the Academy of Chocolate and the International Chocolate Salon, reflecting a dedication to craftsmanship, creativity, and the pursuit of excellence in chocolate. She was part of the team supporting Christophe Rull at the World Chocolate Masters in Paris, and in 2025 had the privilege of working alongside the team at Maison Caffet in Troyes, France.
